Lotus Roots Stew Pork

We are back by popular demand!

Took a relatively long break from blogging due to the numerous holidays and was busy exploring some new recipes with my new kitchen stove and new phone to take better photos!

With much encouragement from family and fans (am pretty amazed how fab club builds up!), it’s time to restart this blog to share my love for cooking with everyone.

This is a simple dish that goes very well with rice and if my fussy grandchild loves it, I am sure your family will eat with love too!

Ingredients:

  • 500 gm Streaky Pork
  • 800 gm Lotus Roots
  • 1 Thumb sized ginger(smashed)
  • 6 cloves Garlic
  • Water

Seasonings:

  • 2 pcs Fermented Red Bean Curds
  • 1 Tbsp Fermented Red Bean Curds sauce
  • 1 Tbsp Light soy sauce
  • 1 Tbsp Shaoshing Wine
  • Salt and sugar to taste

Instructions:

  • Cut streaky pork in big chunks
  • Peel, cut off the both ends of lotus roots, wash and cut into big chunks
  • Pan fry the pork with oil to seal the juice and browned it slightly
  • In a stew pot, sauté the garlic, ginger, fermented red bean curd, add in the streaky pork to stir fry for some minutes followed by the wine, light soy sauce, chunks lotus n fermented red bean sauce
  • Add water to cover slightly above the ingredients; cover it to bring to a boil and simmer for 30 minutes over low heat until the meat and lotus roots are tender
  • Lastly season with salt and sugar as desired
