Satay Chicken

After 40 years of cooking, it still warms my heart when the family expresses their “OOOOOs”, “WOW” and “YAY” when they savour my yummy cooking.

A non-spicy Satay Chicken that is flavorful enough to omit the satay sauce and sends your tongue dancing while your tummy craves for more of it!

Ingredients:

  • 600 gm Fillet Chicken (cut into cubes)
  • Bamboo skewers

Spice paste:

  • 5 Cloves Garlic
  • 6 Small Onions
  • 3 Stalk Lemongrass (white part only)
  • 3 Thumb sized yellow ginger (Turmeric)
  • 1 Thumb sized Galangal (lengkuas)
  • 2 Tbsp Coriander Powder
  • 1 1/2 Tbsp Cumin Powder
  • 4 Tbsp Palm Sugar
  • 6 Tbsp Oil

Instructions:

  • Ingredients to be grind to paste – garlic, small onions, lemongrass, turmeric, galangal
  • Combined the spice paste with coriander powder, cumin powder, palm sugar and oil
  • Soak bamboo skewers in water for half hour
  • Mix the chicken cubes into the combined paste
  • Marinate it for at least an hour or leave to the fridge overnight for better flavour
  • Thread the marinated meat on the bamboo skewers and grill it
  • Do baste with oil while grilling for the nice charred colour
